Cake and Flowers

Not for the first time I bring you cake and flowers. Daffodils and coconut buns. 


Coconut buns are a variation on old fashioned rock buns and dead easy to make. The recipe comes from my 1960 edition of The Good Housekeeping Cookery Compendium which I wrote about here.

Coconut Buns

Makes 16-18

Rub together 12 oz self-raising flour and 6 oz butter.
Add a pinch of salt if you have used unsalted butter.
Stir in 6 oz sugar and 4 oz desiccated coconut.
Add one beaten egg and enough milk to make a stiff dough.
Put rocky lumps of dough on a greased or lined baking sheet. Don't put them too close together.
Optional -for the cherry on the cake add a cherry to each cake!

Bake for 12-15mins in a very hot oven -the recipe said 450ºF which is 230ºC , this was a bit too hot I thought, I suggest 220ºC (200º fan) and keep an eye on them.

Best eaten fresh and if your blog is six years old today you are allowed to eat six coconut buns.

  8. Happy Quince Tree birthday. And those buns - my mum used to make them when I was little. I haven't had them since but perhaps I should continue the tradition and give them a go. There's a jar of coconut in the dresser which needs using...

  10. I so need to see daffodils today. Thank you. I'd like to think I need coconut buns, but perhaps there is a fine line between need and want. You deserve 6 for making us all happy with your photos and recipes. I must say, the temperature is a bit alarming, 100 degrees higher than the normal temp for cookies, but they do look good.

    Your buns reminded me of the rock cakes my Mum used to bake when I was little. I loved them so much. Enjoy all six of yours. Will you eat them all in one go, or spread them out over the course of a day?

  14. Sue, you might be asleep by the time I see this post and type a comment, but let me thank you for six years of excellent blogs, on all sorts of topics that make it easy for me to look forward to what you might next post.

    And, I would love to taste one of those coconut buns. Would you perhaps treating yourself to the one you'd been saving for me...tomorrow?

    I'm a fan of coconut, and will eventually get around to trying this recipe. After all, you are the one whose recipes got me to reconsider, and enjoy, kale.

  18. oh, Happy 6th Birthday and may there be many more. Like everyone else I really look forward to your posts & use several of your recipes - have made that fruit cake that used up the bits & pieces three times now as it's really nice and ideal to take to bake sales and coffee mornings etc.
    I also love your outlook on life, cooking, baking and housekeeping!
    Please just keep up the good work for all of us in blog-land!

  19. dipped back to your "jolly good chocolate cake" piece. I have a couple of old cookbooks, and love those unpretentious monochrome or 'orribly coloured photographs of cakes and dinners. Most definitely the reason I like your blog above all others (and I've looked at many in my ailing on the sofa moments) is because you are so down to earth, the food is wonderful, and there is none of this aspirational nonsense…for nonsense it is. (I do remember you slightly pushed this with the blog of the dust under the bed. I'm not sure the worlds ready for it)
